Description

Ingredients

  • 1 whole chicken (about 34 lbs)
  • 8 cups water
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1 tsp dried thyme
  • 2 cups egg noodles
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Place the chicken in a large pot and add water. Bring to a boil, then reduce heat and simmer for 1 hour.
  2. Remove the chicken from the pot and let it cool. Shred the meat and discard the bones.
  3. Add onion, carrots, celery, garlic, salt, pepper, bay leaves, and thyme to the pot. Simmer for 20 minutes.
  4. Return the shredded chicken to the pot and add egg noodles. Cook for 10 minutes or until noodles are tender.
  5. Stir in fresh parsley before serving.

Notes

  • Use leftover rotisserie chicken for a quicker version.
