- 8 oz penne pasta
- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Cut chicken breasts into thin cutlets. Season with salt, pepper, and garlic powder.
- Mix breadcrumbs, Parmesan, and Italian seasoning in a shallow dish.
- Whisk egg in a separate bowl. Dip chicken in egg, then coat with breadcrumb mixture.
- Heat olive oil in a pan. Cook chicken until golden and fully cooked (about 4-5 minutes per side).
- Spread half the marinara sauce in a baking dish. Add cooked pasta and top with chicken.
- Pour remaining sauce over chicken. Sprinkle with mozzarella cheese.
- Bake at 375°F (190°C) for 15 minutes or until cheese is bubbly.
Notes
- For crispier chicken, bake breaded cutlets at 400°F (200°C) for 20 minutes instead of pan-frying.
- Substitute gluten-free pasta and breadcrumbs if needed.
- Add red pepper flakes for a spicy kick.
