  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Cut chicken breasts into thin cutlets. Season with salt, pepper, and garlic powder.
  3. Mix breadcrumbs, Parmesan, and Italian seasoning in a shallow dish.
  4. Whisk egg in a separate bowl. Dip chicken in egg, then coat with breadcrumb mixture.
  5. Heat olive oil in a pan. Cook chicken until golden and fully cooked (about 4-5 minutes per side).
  6. Spread half the marinara sauce in a baking dish. Add cooked pasta and top with chicken.
  7. Pour remaining sauce over chicken. Sprinkle with mozzarella cheese.
  8. Bake at 375°F (190°C) for 15 minutes or until cheese is bubbly.

Notes

  • For crispier chicken, bake breaded cutlets at 400°F (200°C) for 20 minutes instead of pan-frying.
