- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup sugar
- 4 (8 oz) packages cream cheese, softened
- 1 1/4 cups sugar
- 1 tsp vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
- Beat cream cheese until smooth. Add sugar and vanilla, mixing well.
- Add eggs one at a time, blending after each.
- Mix in sour cream and heavy cream until smooth.
- Pour filling over the crust. Bake for 1 hour 10 minutes or until set.
- Turn off the oven and let the cheesecake cool inside for 30 minutes.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- Use room-temperature ingredients for smoother batter.
- Avoid overmixing to prevent cracks.
- Run a knife around the edges before removing the springform pan.
