- 500g chicken thighs, cut into bite-sized pieces
- 1 cup potato starch
- 2 tbsp soy sauce
- 1 tbsp sake
- 1 tsp ginger, grated
- 1 tsp garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- Oil for deep frying
Instructions
- Mix soy sauce, sake, ginger, garlic, salt, and black pepper in a bowl.
- Add chicken pieces to the marinade and let sit for 30 minutes.
- Heat oil in a deep pan to 170°C (340°F).
- Coat each chicken piece in potato starch.
- Fry the chicken in batches for 5-6 minutes until golden and crispy.
- Drain on paper towels and serve hot.

- Use potato starch for extra crispiness.
- Do not overcrowd the pan while frying.
- Serve with lemon wedges or Japanese mayo.
