- 1.5 lbs boneless, skinless chicken thighs
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/2 tsp red pepper flakes
- 1/4 cup chicken broth
- 1 red bell pepper, sliced
- 1/4 cup chopped peanuts
- 2 green onions, sliced
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, garlic, ginger, red pepper flakes, and chicken broth.
- Pour the sauce over the chicken.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Add sliced bell pepper in the last 30 minutes of cooking.
- Garnish with chopped peanuts and green onions before serving.
Notes
- Use natural peanut butter for a smoother sauce.
- Adjust red pepper flakes for spiciness.
- Serve over rice or noodles.
