Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides, then transfer to the crockpot.
  2. Add carrots, potatoes, onion, and garlic to the crockpot.
  3. Pour in beef broth, diced tomatoes, and tomato paste. Stir to combine.
  4. Add thyme, rosemary, bay leaf, salt, and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Remove the bay leaf before serving. Enjoy hot.
