- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 carrot, diced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) diced tomatoes
- 2 cups vegetable broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, bell pepper, and carrot. Cook for 5 minutes until softened.
- Stir in black beans, kidney beans, diced tomatoes, and vegetable broth.
- Add chili powder, cumin, paprika, salt, and pepper. Mix well.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot with your favorite toppings.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Top with avocado, cilantro, or shredded cheese if desired.
