Ingredients

- 1 1/2 cups chocolate cookie crumbs
- 6 tbsp melted butter
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
- Green food coloring (optional)
- 1/2 cup mini marshmallows
- 1/2 cup crème de menthe liqueur
Instructions
- Mix cookie crumbs and melted butter, press into a pie dish to form the crust.
- Chill for 30 minutes.
- Whip heavy cream, powdered sugar, vanilla, and peppermint extract until stiff peaks form.
- Fold in marshmallows and crème de menthe.
- Add green food coloring if desired.
- Pour filling into the crust and freeze for at least 4 hours.
- Slice and serve chilled.
Notes
- Use gluten-free cookies for a gluten-free version.
- For a non-alcoholic version, replace crème de menthe with mint syrup.
- Store leftovers in the freezer.
