  • 1 cup unsalted butter
  • 3/4 cup cocoa powder
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 2 large eggs
  • 2/3 cup sour cream
  • 1 cup Irish butter, softened
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch cake pan.
  2. Heat Guinness and butter in a saucepan until melted. Whisk in cocoa powder until smooth. Let cool slightly.
  3. In a bowl, mix flour, sugar, baking soda, and salt.
  4. Beat eggs and sour cream in another bowl. Add the Guinness mixture and mix well.
  5. Gradually add dry ingredients to wet ingredients, mixing until combined.
  6. Pour batter into the pan and bake for 35-40 minutes. Let cool completely.
  7. For the buttercream, beat Irish butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla. Spread over cooled cake.
