- 2 lbs boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 red bell pepper, sliced
- 1 onion, sliced
- 1 cup pineapple chunks
Instructions
- Place chicken breasts in the crockpot.
- In a bowl, mix pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Pour the sauce over the chicken.
- Add bell pepper, onion, and pineapple chunks on top.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken and mix with the sauce before serving.
Notes
- For extra flavor, marinate the chicken in the sauce overnight.
- Serve over rice or with a side of steamed vegetables.
- Adjust sweetness by adding more or less brown sugar.
