Ingredients

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 cup green beans, chopped
  • 1 cup corn kernels

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Cook for 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Add chicken and cook until browned.
  5. Pour in broth and water. Stir in salt, pepper, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Add green beans and corn. Simmer for 10 more minutes.
  8. Remove bay leaf before serving.
