Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 lemon, juiced and zested
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup orzo pasta
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook for 5 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Add chicken breasts and simmer for 15 minutes until cooked.
  5. Remove chicken, shred it, and return to the pot.
  6. Stir in orzo pasta and cook for 8 minutes.
  7. Add lemon juice, zest, salt, and pepper.
  8. Garnish with parsley before serving.

Notes

  • Adjust lemon to taste.
  • Replace orzo with rice if preferred.
  • Store leftovers in the fridge for up to 3 days.
