A light and refreshing soup with tender chicken and zesty lemon flavor.
Ingredients

- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 lemon, juiced and zested
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup orzo pasta
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add chicken breasts and simmer for 15 minutes until cooked.
- Remove chicken, shred it, and return to the pot.
- Stir in orzo pasta and cook for 8 minutes.
- Add lemon juice, zest, salt, and pepper.
- Garnish with parsley before serving.
Notes
- Adjust lemon to taste.
- Replace orzo with rice if preferred.
- Store leftovers in the fridge for up to 3 days.
