Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese (optional)
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes per side. Remove and set aside.
  3. In the same pot, sauté onion, garlic, and bell pepper until softened, about 3 minutes.
  4. Add diced tomatoes, chicken broth, Italian seasoning, salt, and black pepper. Stir well.
  5. Break spaghetti in half and add to the pot. Stir to submerge in the liquid.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, stirring occasionally.
  7. Shred the cooked chicken and return it to the pot. Stir to combine.
  8. If using cheese, sprinkle on top and cover for 2 minutes to melt.
  9. Serve hot.
