- 2 boneless, skinless chicken breasts
- 8 oz spaghetti
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheese (optional)
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, about 5 minutes per side. Remove and set aside.
- In the same pot, sauté onion, garlic, and bell pepper until softened, about 3 minutes.
- Add diced tomatoes, chicken broth, Italian seasoning, salt, and black pepper. Stir well.
- Break spaghetti in half and add to the pot. Stir to submerge in the liquid.
- Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, stirring occasionally.
- Shred the cooked chicken and return it to the pot. Stir to combine.
- If using cheese, sprinkle on top and cover for 2 minutes to melt.
- Serve hot.
Notes
- Use whole wheat spaghetti for a healthier option.
- Add a pinch of red pepper flakes for extra heat.
- Leftovers can be stored in the fridge for up to 3 days.
