- 24 Oreo cookies (divided)
- 3 tbsp butter (melted)
- 16 oz cream cheese (softened)
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
Instructions
- Preheat oven to 325°F (165°C).
- Crush 18 Oreo cookies and mix with melted butter. Press into a 9-inch springform pan for the crust.
- Beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each.
- Stir in vanilla and sour cream. Fold in chopped remaining Oreos.
- Pour filling over crust. Bake for 45-50 minutes until set.
- Cool completely before refrigerating for at least 4 hours.

- Use full-fat cream cheese for best texture.
- Let cheesecake cool slowly to prevent cracks.
- Store leftovers in the fridge for up to 5 days.
