A fragrant and creamy rice dish infused with saffron and yogurt, paired with tender chicken.
Ingredients

- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup plain yogurt
- 1 tsp saffron threads, soaked in 2 tbsp warm water
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 2 tbsp ghee or oil
- Salt to taste
- 4 cups water
- Fresh cilantro for garnish
Instructions
- Rinse the rice and soak it in water for 20 minutes. Drain.
- Heat ghee or oil in a pot. Add onions and sauté until golden.
- Add garlic, ginger, cumin, coriander, and turmeric. Cook for 1 minute.
- Add chicken pieces and cook until browned.
- Stir in yogurt and soaked saffron. Mix well.
- Add rice, water, and salt. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes until rice is tender.
- Garnish with fresh cilantro before serving.
Notes
- Soak saffron in warm water for better color and flavor.
- Use full-fat yogurt for a creamier texture.
- Adjust spices to your taste.
