Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup plain yogurt
  • 1 tsp saffron threads, soaked in 2 tbsp warm water
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 2 tbsp ghee or oil
  • Salt to taste
  • 4 cups water
  • Fresh cilantro for garnish

Instructions

  1. Rinse the rice and soak it in water for 20 minutes. Drain.
  2. Heat ghee or oil in a pot. Add onions and sauté until golden.
  3. Add garlic, ginger, cumin, coriander, and turmeric. Cook for 1 minute.
  4. Add chicken pieces and cook until browned.
  5. Stir in yogurt and soaked saffron. Mix well.
  6. Add rice, water, and salt. Bring to a boil.
  7. Reduce heat, cover, and simmer for 20 minutes until rice is tender.
  8. Garnish with fresh cilantro before serving.

Notes

  • Soak saffron in warm water for better color and flavor.
  • Use full-fat yogurt for a creamier texture.
