- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup crushed tortilla chips
Instructions
- Brown the ground beef in a skillet over medium heat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Transfer the beef mixture to the slow cooker.
- Stir in beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper.
- Cover and cook on low for 4-5 hours.
- Stir in sour cream and top with shredded cheese and crushed tortilla chips.
- Cover and cook for 10 more minutes until cheese melts.
- Serve hot.

- Use lean ground beef for a healthier option.
- Substitute black beans for kidney beans if preferred.
- Garnish with fresh cilantro or green onions if desired.
