A hearty and flavorful slow cooker taco casserole that’s easy to prepare and perfect for busy days.
Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Transfer the beef to the slow cooker. Add taco seasoning, salsa, black beans, and corn. Stir well.
- Cover and cook on low for 4 hours or high for 2 hours.
- Stir in half the cheese and crushed tortilla chips. Top with remaining cheese.
- Cover and cook for another 10 minutes until the cheese melts.
- Serve with a dollop of sour cream and a sprinkle of fresh cilantro.
Notes
- You can use ground turkey instead of beef.
- For extra spice, add diced jalapeños.
- Leftovers store well in the fridge for up to 3 days.
