Description

A hearty and flavorful slow cooker taco casserole that’s easy to prepare and perfect for busy days.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Transfer the beef to the slow cooker. Add taco seasoning, salsa, black beans, and corn. Stir well.
  3. Cover and cook on low for 4 hours or high for 2 hours.
  4. Stir in half the cheese and crushed tortilla chips. Top with remaining cheese.
  5. Cover and cook for another 10 minutes until the cheese melts.
  6. Serve with a dollop of sour cream and a sprinkle of fresh cilantro.

Notes

  • You can use ground turkey instead of beef.
  • For extra spice, add diced jalapeños.
  • Leftovers store well in the fridge for up to 3 days.
