Soft and chewy cookies with pistachio pudding mix, perfect for St. Patrick’s Day.

- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (3.4 oz) package instant pistachio pudding mix
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 1/2 cup chopped pistachios (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Mix in pistachio pudding mix until fully incorporated.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients.
- Fold in white chocolate chips and chopped pistachios (if using).
- Drop dough by rounded tablespoons onto prepared baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cool on baking sheets for 5 minutes before transferring to wire racks.
Notes
- Store cookies in an airtight container for up to 5 days.
- For extra green color, add a few drops of green food coloring.
- Replace pistachios with walnuts or pecans if preferred.
