  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (3.4 oz) package instant pistachio pudding mix
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup chopped pistachios (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. Mix in pistachio pudding mix until fully incorporated.
  5. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients.
  6. Fold in white chocolate chips and chopped pistachios (if using).
  7. Drop dough by rounded tablespoons onto prepared baking sheets.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Let cool on baking sheets for 5 minutes before transferring to wire racks.
