Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, salt, and baking powder.
- Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Add green food coloring until the desired shade is reached.
- Roll the dough into 1-inch balls and place them on the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
- Decorate with sprinkles while still warm if desired.
Notes

- For a softer cookie, slightly underbake by 1 minute.
- Use gel food coloring for more vibrant green color.
