Celebrate St. Patrick’s Day with these minty blossom cookies. They are soft, flavorful, and perfect for the occasion.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp peppermint extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- Green food coloring (optional)
- 24 chocolate mint candies
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream butter and sugar until smooth.
- Add egg and peppermint extract, mix well.
- In another bowl, whisk flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture, mixing until combined.
- Add green food coloring if desired.
- Roll dough into 1-inch balls and place on a baking sheet.
- Bake for 10-12 minutes.
- Press a chocolate mint candy into the center of each cookie while warm.
- Let cool before serving.

- Store in an airtight container for up to 5 days.
- For extra mint flavor, use mint chocolate candies.
