  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt, pepper, and chili powder. Grill until fully cooked, about 6-8 minutes per side.
  2. In a bowl, mix corn, mayonnaise, lime juice, cotija cheese, and cilantro.
  3. Heat olive oil in a pan and sauté garlic for 30 seconds. Add cooked rice and stir to combine.
