Ingredients

  • 1 red chili, finely chopped (optional)
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 tbsp smooth peanut butter
  • 1 clove garlic, minced
  • 1 tsp sesame oil
  • 1 tbsp water (to thin dressing if needed)

Instructions

  1. In a small bowl, whisk together lime juice, soy sauce, honey, peanut butter, garlic, and sesame oil to make the dressing. Add water if needed to thin.
  2. Place sliced cucumbers, red onion, and chili (if using) in a large bowl.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Sprinkle chopped peanuts and cilantro on top before serving.
  5. Serve immediately or chill for 30 minutes for more flavor.
