Ingredients

- 2 large cucumbers, thinly sliced
- 1/4 cup roasted peanuts, roughly chopped
- 2 tbsp fresh cilantro, chopped
- 1 small red onion, thinly sliced
- 1 red chili, finely chopped (optional)
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp honey
- 2 tbsp smooth peanut butter
- 1 clove garlic, minced
- 1 tsp sesame oil
- 1 tbsp water (to thin dressing if needed)
Instructions
- In a small bowl, whisk together lime juice, soy sauce, honey, peanut butter, garlic, and sesame oil to make the dressing. Add water if needed to thin.
- Place sliced cucumbers, red onion, and chili (if using) in a large bowl.
- Pour the dressing over the vegetables and toss gently to coat.
- Sprinkle chopped peanuts and cilantro on top before serving.
- Serve immediately or chill for 30 minutes for more flavor.

- Use seedless cucumbers for best texture.
- Adjust chili amount to your preferred spice level.
- For extra crunch, add bean sprouts or shredded carrots.
