Ingredients

- 2 lbs potatoes, peeled and diced
- 1 cup mayonnaise
- 2 tbsp mustard
- 1/2 cup chopped celery
- 1/4 cup chopped red onion
- 2 hard-boiled eggs, chopped
- 1 tbsp vinegar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped pickles (optional)
- 2 tbsp fresh parsley, chopped
Instructions
- Boil potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.
- In a large bowl, mix mayonnaise, mustard, vinegar, salt, and pepper.
- Add cooled potatoes, celery, red onion, eggs, and pickles (if using). Stir gently to coat.
- Refrigerate for at least 1 hour before serving.
- Sprinkle with fresh parsley before serving.
Notes
- For best flavor, make this salad a day ahead.
- Adjust seasoning to taste.
- Store leftovers in the refrigerator for up to 3 days.
