Ingredients

- 1 red bell pepper, diced
- 1 yellow bell pepper, diced

Instructions
- Wash and slice the cucumbers.
- Dice the red and yellow bell peppers.
- Thinly slice the red onion.
- In a large bowl, combine cucumbers, bell peppers, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
- Sprinkle with fresh parsley before serving.
