Classic blueberry muffins with a tender crumb and juicy berries
Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 egg
- 1 cup milk
- 1/4 cup vegetable oil
- 1 cup fresh blueberries
Instructions
- Preheat oven to 400°F (200°C)
- Mix dry ingredients in large bowl
- Beat egg, milk and oil in separate bowl
- Add wet ingredients to dry ingredients
- Fold in blueberries gently
- Fill muffin cups 2/3 full
- Bake 20-25 minutes until golden
Notes
- Do not overmix batter
- Frozen blueberries work if thawed and drained
- Dust blueberries with flour to prevent sinking
