Ingredients

  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 400°F (200°C)
  2. Mix dry ingredients in large bowl
  3. Beat egg, milk and oil in separate bowl
  4. Add wet ingredients to dry ingredients
  5. Fold in blueberries gently
  6. Fill muffin cups 2/3 full
  7. Bake 20-25 minutes until golden

Notes

  • Do not overmix batter
  • Frozen blueberries work if thawed and drained
  • Dust blueberries with flour to prevent sinking
