- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can black-eyed peas, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely diced
- 2 Roma tomatoes, seeded and diced
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 lime, juiced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the black beans, black-eyed peas, corn, red bell pepper, green bell pepper, red onion, tomatoes, avocado, and cilantro.
- In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, chili powder, cumin, salt, and pepper.
- Pour the dressing over the bean and vegetable mixture.
- Gently toss everything together until well coated.
- Serve immediately or cover and refrigerate for at least 30 minutes to let the flavors blend.

- For best flavor, let the salad chill in the refrigerator for an hour before serving.
- Serve with tortilla chips as a dip or as a side dish for grilled meats.
