  • 1 (15 oz) can black-eyed peas, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely diced
  • 2 Roma tomatoes, seeded and diced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black beans, black-eyed peas, corn, red bell pepper, green bell pepper, red onion, tomatoes, avocado, and cilantro.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, chili powder, cumin, salt, and pepper.
  3. Pour the dressing over the bean and vegetable mixture.
  4. Gently toss everything together until well coated.
  5. Serve immediately or cover and refrigerate for at least 30 minutes to let the flavors blend.
