Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup melted butter
- 2 eggs
- 1 cup milk
- 1 tbsp lemon zest
- 2 tbsp lemon juice
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- Mix flour, sugar, baking powder, and salt in a bowl.
- In another bowl, whisk melted butter, eggs, milk, lemon zest, and lemon juice.
- Combine wet and dry ingredients. Stir until just mixed.
- Fill muffin cups 2/3 full. Bake for 20 minutes or until golden.
- Cool for 5 minutes before serving.
Notes
- Do not overmix the batter.
- Store in an airtight container for up to 3 days.
- Add a lemon glaze for extra sweetness.
