- 2 lbs beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp apple cider vinegar
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 2 bay leaves
- Corn tortillas
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Cut beef into large chunks.
- Place beef in a slow cooker.
- Add onion, garlic, beef broth, vinegar, cumin, oregano, salt, pepper, and bay leaves.
- Cook on low for 8 hours or high for 4 hours.
- Shred beef with forks.
- Serve on warm tortillas with cilantro and lime.
