Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in egg, lemon zest, and lemon juice until combined.
- In a separate bowl, whisk flour, baking powder, and salt.
- Gradually mix dry ingredients into the butter mixture until dough forms.
- Drop tablespoon-sized dough balls onto baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cool on baking sheets for 5 minutes before transferring to a wire rack.
