Instructions
- Whisk the eggs in a bowl and season with salt and pepper.
- Heat a skillet over medium heat and melt the butter.
- Pour the eggs into the skillet and scramble until fully cooked.
- Remove the eggs and set aside.
- Place the tortilla in the skillet and sprinkle half with cheese.
- Add the scrambled eggs on top of the cheese.
- Fold the tortilla in half and cook for 1-2 minutes per side until crispy and golden.
- Slice and serve hot.
