- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained
- 1 can (4 oz) diced green chiles
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken broth
- 8 small flour tortillas
- 1/2 cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until no longer pink, about 5 minutes.
- Add onion and garlic, cook until softened, 2-3 minutes.
- Stir in white beans, green chiles, cumin, chili powder, salt, and pepper.
- Pour in chicken broth and simmer for 10 minutes.
- Warm tortillas as per package instructions.
- Spoon chicken chili mixture onto tortillas.
- Top with shredded cheese and cilantro if desired.
- Serve immediately.
Notes
- Use rotisserie chicken for a quicker option.
- Adjust spice level by adding more or less chili powder.
- Store leftovers in an airtight container for up to 3 days.
